Our BCOC (Big Cookie on Campus) and voted Most Likely to Succeed. Huge chunks of Belgian dark chocolate are baked into these soft, chewy cookies that are then finished with a sprinkling of sea salt. The Oregonian called them “Contender for Best Chocolate Chip in Portland.”
BROWNED BUTTER OATMEAL
Our bakers spend the morning browning butter for these cookies, which gives them a rich toffee flavor. Brown sugar, toasted pecans, and tart dried cranberries -- this ain’t your grandma’s oatmeal cookie. Many people tell us, “It’s the best cookie I’ve ever eaten!” (And although we won’t name names, we also hear they make decadent breakfast treats).
PURIST PEANUT BUTTER
Pure bliss because they are made with all-natural peanut butter. We add a few chocolate drops to their soft pillow-like interior; the exterior is all sugary, crackly goodness.
This corn cookie was introduced in June 2014 and has a bit of a cult following; we’ve heard it accurately described as a “corn-y snickerdoodle.” We think it bares some resemblance to a certain crunchy Cap’n many of us ate while watching cartoons as kids. But however you choose to describe it, we think you’ll find it a-maizing.

A rich, chewy cookie developed by one of the Bluebird OGs. The recipe features baker’s cut candied ginger, molasses, and a medley of fragrant spices, including hand-grated nutmeg.
